Life wouldn’t be worth living without pizza in my opinion. Almost every Friday night is pizza night in this house. Usually because I am exhausted from the week and have no desire to cook. And because well lets face it…pizza is delicious. However it does not fit into my healthier lifestyle I am after.

I made this tonight for myself while the rest of my family had regular pizza and it was really good! I am not usually up for making two meals because it is way too much work. Thankfully this is a pretty easy thing to throw together. Especially if you have the meat and veggies pre-made. Then you just throw it on and slide it in the oven.

At the end of the night, I ended up satisfying my pizza craving without feeling deprived. My tummy thanked me for not filling it full of crap. If you have ever eaten really healthy for a week (or longer) and then eaten something that is not good for you, you understand what I am talking about. Cramp city.

PS. I used turkey sausage and topped it with avocado. I think next time I will sub out the pizza sauce for some light BBQ sauce and top with onions and chicken. Super good!

The Recipe

Here is what you need:

  • Whole Wheat Tortillas ( I used these: http://amzn.to/2jGlkZt)
  • Pizza sauce
  • Cheese (Whatever you prefer)
  • Any Toppings you would like
    • For example: Chicken, avocado, olives, onions…

How:

This is so easy it isn’t even funny. Put the sauce on the tortilla shell and put the cheese and toppings on it. Throw it in the oven at 425 degrees for about ten minutes (or until it is done to your liking). Then it is done!

Put the sauce on the tortillas!
Add the toppings & cheese.

On the Go Healthy Crockpot Stir-Fry

Recently my third child (my husband) and I have gotten back into the “health” swing of things and it feels so good to be back. Before I got pregnant I was huge into working out and eating super healthy. Huge. I was really hardcore and my husband made fun of me and begged me to make “normal” food.  So I found it super funny when he was the one that started all of this!

I have always been a huge fan of crockpot and easy meals, especially when I was eating healthy. I love the idea of dump and go. My life was hectic before having Buddy and now as you can imagine, I am even more busy. So I need all the help I can get. Last Christmas my mother bought me the best present I have gotten in a long time. I had been raving about my love of crockpot meals but complaining that everything was drying out because it cooked too long. When you commute 45 minutes both ways, it is hard to cook things in a crockpot because like I said, crap dries out. Anyways, she got me a nice big crockpot that has a timer! After eating chicken all  this week, my husband begged me to do something different. Something other than chicken and mexicanish food. After scouring Pinterest  I found a similar to this but I made it even easier and tweaked it a bit. AKA I changed a few ingredients and threw it in a crockpot! This could be easily converted into a freezer meal (another thing I LOVE to do). Just throw the ingredients in a gallon bag and freeze it.

This was super yummy and thumbs up from the hubby.

 

The Recipe

What you will need:On the Go Healthy Crockpot Stir-Fry

  • 1 package of frozen stir-fry veggies ( I used Birds Eye)
  • 1lb of round steak or chuck steak cut up
  • 1 tbsp Ginger
  • 1/2 cup Beef Broth (Try using low sodium)
    • Note: If you decide to use chicken, use chicken broth instead
  • 2 tbsp Ketchup
  • 2 tbsp Soy Sauce (Try using low sodium)
  • 1 tsp Cornstarch
  • 2 tsp Sesame Oil
  • 3 tbsp Olive Oil
  • 1 cup cut up broccoli (or frozen)

How to do it:

Here is the easy part! Throw it all into the crockpot and once it is mixed, set it on high for around 3.5 hours or low for 7 hours and you are done!

Super easy and super tasty! I would suggest serving it over wheat rice or even cauliflower rice. Whichever you prefer!
